  • When do the English like to have a cup of tea?
  • What is high tea?

Tea is very popular with the English. It may almost be called their national drink. Tea is welcome in the morning, in the afternoon and in the evening. The English like it strong and fresh made. Tea must be “just like mother makes it”, one tea-spoonful of tea for each person and one for the pot”. They drink it with or without sugar but almost always with milk.

Some people like “high tea”, they have ham or tongue. Tomatoes and salad, or a kipper or tinned salmon or sausages, with good strong tea, bread and butter, then stewed fruit, or a tin of pears, apricots or pineapples with cream or custard and pastries of a good cake. And that’s what they call a good tea. It’s a substantial meal.

Time for Tea

The British and tea are inseparable. 8 out of 10 people in Britain drink tea every day and Britain imports about 20% of all the world’s tea. Tea makes up about half of all that a British person drinks. Tea has even played a part in British literature and history.

Do you remember the Mad Hatter’s tea party in Alice in Wonderland? And there was “the Boston Tea Party” when a group of Americans threw a delivery of tea from the ships into the waters of Boston harbor because the ruling British government wanted to tax it. This particular tea party marks the beginning of the movement to make America independent.

Tea didn’t come to Europe until 1610 and was introduced to Britain in 1657 by Catherine of Braganza, King Charles П’s wife. But by the 1800s, the exotic drink became so popular that special ships (“clippers”) were designed to bring it quickly from China.

Most people in Britain drink tea with black leaves although now herbal teas which do not contain caffeine are becoming more popular.

The taste of teas can be very different even if they are from the same farm and expert tea -tasters have to blend them to ensure that packets of tea which have the same label taste the same when you buy in a shop.

The British are very fussy about how their tea is made. The teapot must be warmed before the tea is put in, the water must be boiling properly, the right quantity of tea – “one spoon for each person and one for the pot” must be used and the tea must be brewed for three minutes. They see the drinking of tea as the opportunity to relax for a few minutes. It’s also regarded as a great comforter. If you’ve just suffered a misfortune in Britain and you call on a friend, you’re likely to be told, “Oh well, just sit down and I’ll make you a nice cup of tea”!

Tea Clipper Races

In the middle of the nineteenth century, the new tea clippers raced every year from China to Britain. The clipper races were an exciting and popular sporting event. Several clippers left Canton at the same time and raced down the China Sea, past Singapore, across the Indian Ocean, and round the Cape of Good Hope. (Unfortunately, the Suez Canal in Egypt was not open at that time.) They continued up the Atlantic Ocean, along the west coast of Africa, past the Azores Islands, and into the English Channel. Three to four months after leaving China, the clippers sailed up the River Thames to London. The first ship to arrive sold its tea at the highest price, and the captain and crew made a lot of money.

  • Why do Russian people like bliny?

P1: I think there is no dish more popular than pancakes on the Russian table.

P2: Oh yes, I agree. Bliny are served with honey, sour cream, milk, butter, jam and cheese.

P1: Do you like to bake bliny?

P2: My mother does. She makes them in a wooden bowl and adds milk to make them tastier.

P1: As for my family, we eat them as a main dish and a dessert. I like bliny with salmon and sardines.

P2: Great.

Teacher: Listen to one more dialogue and answer the questions.

  • Why was master angry with his servant?
  • What is the principal thing about tea?

P3: Some people like tea very much. They drink “white” tea with cream or milk, others like it with lemon or jam.

P4: As far as I know tea wasn’t popular at all in Russia because it was very expensive.

P3: What is more, first people used tea as medicine. Most people didn’t know how to make tea.

P4: It is very strange. In fact, tea has become a real national Russian drink for the last two centuries.

P3: But I can tell you some funny stories about tea. One servant made tea with onion, pepper and parsley. His master was mad about this. Then the servant decided that he forgot to salt the tea.

P4: How very funny! I want to add that traditionally Russian tea is served in couple, little teapot and samovar with boiling water. Samovar was a pure Russian invention.

P3: I know that sugar was very expensive and true professionals could drink 6-7 cups of tea with one piece of sugar!

P4: I want to add that the principal thing about tea is its freshness. Fresh tea is like balsam, and tea left for a night, is like snake’s poison.
