Bashkir Meals.

It is impossible to get acquainted with people well if you don’t know what national dishes they cook. What dishes are considered Bashkir national ones? Bashkir honey is the best in the world. Different drinks are made with honey. If you are invited to visit a village, you will be given kumis, mare’s milk. I am sure that you will not be indifferent to fried goose, sweet soup and confectionery.

Pre-reading Activities

  1. Answer the questions. Explain why you think so.
  2. 1. Who usually prepares meals in your family?

  3. Do the members of your family have favourite dishes? What are they?
  4. Describe some traditions or customs connected with your family or public holidays in Bashkortostan.

4. Do you often go to the restaurants or cafes? What table manners do you know? Brush up your table manners.

2. Read the dialogue and then mark sentences T or F. In pairs read out the dialogue.

Rashid: Oh, mum! I smell something cooking!

Mother: You are right, son. I am cooking our traditional Bashkir dish – chack-chack. Will you help me?

Rashid: With great pleasure. What shall I do?

Mother: Take a mixer. It is in the cupboard.

Rashid: Shall I …?

Mother: Oh, my darling? Have you ever seen what I begin with?

Rashid: I am afraid, I haven’t.

Mother: Start with sifting the flour. Take 6 eggs. I hope you know where they are.

Rashid : I hope I don’t have to go to the shop.

Mother: Of course, not. Beat them carefully, add sifted flour, salt and don’t forget the baking powder.

Rashid: For what?

Mother: Are you helping me?

Rashid: Yes, mom. Don’t worry! I’ll do what you want. What shall I add next?

Mother: Nothing! Mix dough. Try to make it soft.

Rashid: Oh, it is not as easy as I thought. What next?

Mother: Make a rope about 0,5 cm thick, cut into pieces 0,5· 0,5 cm thick and fry in melted hot butter.

Rashid: Everything is ready. May I eat chack-chack?

Mother: No. Put everything on a flat plate. Make a pyramid. Pour the syrup I’ve made.

Rashid: Mom, when shall we eat it?

Mother: Let’s wait for Aunt Rosy.

Chack-chack is a traditional Bashkir dish. It is eaten practically in all families. Children like to eat it at different parties and in schools. Here is the recipe. Hope you’ll like it too.

Chack-Chack

6 eggs(240g),

450g flour,

? teaspoon of salt,

cup of sugar (300g),

1 teaspoon baking powder,

65 g water,

160g honey,

400 g butter.

  1. Beat eggs.
  2. Add sifted flour, salt, baking powder.
  3. Mix dough carefully.
  4. Make a rope about 0,5 cm thick.
  5. Cut into pieces 0,5· 0,5 cm.
  6. Fry in melted hot butter.
  7. Cool before icing.

Syrup:

  1. Pour water and add sugar and honey.
  2. Boil, mixing all the time till 125 C.
  3. Make a pyramid out of tiny pieces of dough (chack-chack) and pour syrup on it.

  4. Some people want to be slim, but they are rather lazy to do exercises. Work with several other students in your group to come up with a list of dishes. Write (make) a menu for people who want to be healthy and good-looking. Read aloud and decide whose menu is the best.

Game. Opinion poll

4. Step 1. The class is divided into groups of equal size. Each group receives one topic in the opinion poll (see Remarks). The groups now follow the suggestions on the group card (see Remarks) and agree on two or three questions they want to ask about their topic. Each group member prepares an interview sheet with these questions. He should fill in his own answers first.

Step 2. The groups are rearranged so that there is one member from each group in each interview group. If there were 6 groups with 5 members each, then there are now 5 new groups which have 6 members each (one from each group). Each member of the new group has to get the answers to his questions from all the other members of the group. This means that in order to fill in his interview sheet each person has to talk to everybody else in the group.

Step 3. The original groups reassemble to organize their data. This may involve quite a lot of discussion where tables or diagrams have to be drawn.

  1. Imagine that you are opening a restaurant. You can open this restaurant anywhere in your town. First, decide what kind of restaurant it will be. For example, will it serve reasonably priced or expensive, national or traditional meals? What kind of food will it serve? Write a short description of your restaurant. Let several of your classmates read it and comment on it.
